Maple Avenue Market

Open Eyes Press hand printed tea towels are now available for purchase at
Maple Avenue Market in Vienna, Virginia!!

I am so excited to be a part of this local foods store, which is committed to supporting area farmers and producers.  They have a beautiful website, and were featured in the Fairfax Times earlier this month, talking about the future of organic farming.  If you are in the area, definitely check them out!

Sour Cream Apple Cake

No Thanksgiving feast is complete without dessert, and this sour cream apple cake is better than pumpkin pie (I'm not even kidding!).  Not too heavy, just the right amount of sweet and tartness, and super moist and delicious.  This was the only picture I could grab of the one I made before it got gobbled down!  Make this cake, and you won't be disappointed.

Sour Cream Apple Cake
1/2 c. vegetable oil (I used light olive oil)
1/2 c. sugar
2 eggs
1 tsp vanilla
1 c. flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/2 c. sour cream
2 tbsp brown sugar
1 tbsp butter, softened
2 Granny Smith apples, peeled and cored (1 chopped, and the other sliced)

1) Cream together oil, sugar, eggs.
2) Add vanilla, flour, baking powder, 1 tsp cinnamon, and sour cream.
3) Stir in chopped apple.
4) Pour into 9" greased round pan with parchment-lined bottom (I used a spring form pan).  Arrange apple slices from the second apple on top.
5) Mix together the brown sugar and butter and crumble onto the top of the cake.  Generously sprinkle with cinnamon.
6) Bake in 350 degree oven for 40-50 minutes, or until toothpick inserted in center comes out clean.

Enjoy!

Thank You Alexandria!
